Hearts of Palm Strawberry Summer Salad {Paleo, Whole30, Vegan}

Hearts of palm strawberry salad is filled with this fresh seasonal fruit, along with avocado, cucumber and poppy seeds. This light, summer salad is Paleo, Whole30, vegan, gluten free, and dairy free.

I'm on a berry kick right now. I'm kind of obsessed. Blueberries and I were getting a little too close. There was the blueberry vanilla chia seed jam and then the blueberry oat bars.

Luckily strawberry season has arrived so I've now turned my attention to the beautiful ripe, red berry and a hearts of palm strawberry summer salad.

The great news about berries is that they are among the fruits with the lowest sugar content. So no huge sugar swings here.

In fact, a recent study has shown that strawberries can actually help to reduce blood sugar levels, which is great news for diabetics and others who are watching their sugar intake. 

Strawberries in particular are loaded with Vitamin C so they're great for boosting immunity. There's manganese, fiber and great anti-inflammatory nutrients, so strawberries are a great health win across the board.

I think heart of palm is grossly underrated. It too is a great source of Vitamin C and also is rich in potassium and fiber, while being low in calories. This vegetable comes from palm trees and has good levels of zinc, which can contribute to faster wound healing.

Besides all the health benefits of both strawberries and hearts of palm, they both just taste really good. I combined some cucumber and avocado to make a light salad, which you could eat with or without lettuce. I doubled down on the strawberries with my recent strawberry poppy seed dressing. It's a refreshing, healthy summer salad.

Hearts of Palm Strawberry Summer Salad
{Paleo, Whole30, Vegan, Gluten Free, Dairy Free}

Serves 2

Ingredients

  • 3 cups baby lettuce

  • 8 ounces fresh strawberries, stems removed and sliced

  • 14 ounce can or jar of hearts of palm

  • 1 small cucumber, cleaned and cubed

  • 1 avocado, peel removed, cubed

  • 1/2 cup strawberry lemon poppy seed dressing

Instructions

  1. Divide lettuce between two bowls. Top with strawberries, hearts of palm, cucumber and avocado. Drizzle with the strawberry lemon poppy seed dressing.
