Three Ingredient Curry Roasted Cauliflower {Paleo, Vegan}

It couldn’t be easier to make this healthy three ingredient curry roasted cauliflower. It’s a great vegetable side dish to add to any meal. It’s paleo, vegan, gluten free, dairy free, and Whole30 friendly.

You know those weeks where you barely have time to eat, let alone pull a nutritious meal together?

Those aren’t the nights for experimenting with complex recipes and new ingredients.

Nope. Those nights are for this three-ingredient curry roasted cauliflower.

Sometimes you just need a few go-to healthy vegetable recipes to have at the ready.

This curry-roasted cauliflower is one of mine.

Cauliflower. You know there’s lots of health benefits here.

Cauliflower has vitamins C, K, B6, and folate.

Then you’ve got your potassium, magnesium, phosphorus, and fiber.

So yeah, cauliflower has many of your nutrient bases covered.

Then you just need some good cooking fat with it.

There’s coconut oil, avocado oil, olive oil, or ghee if you’re not vegan. You can read more about what oils I liked to cook with and which I always avoid.

I top it with curry since it’s a great catch-all.

Curry is a blend of Indian spices that usually includes turmeric, cumin, ginger, garlic, coriander, and cinnamon.

This blend is anti-inflammatory, and will also help with digestion. Talk about a great twofer.

I buy an organic curry blend and then throw it on anything that could use some sprucing up.

Veggies are great, and of course fish or tofu also work well.

So don’t skip out on a healthy meal because you don’t have time.

Three Ingredient Curry Roasted Cauliflower
{Paleo, Vegan, Gluten Free, Dairy Free, Whole30}

Ingredients

  • 1 large cauliflower

  • 2 tablespoons oil or ghee

  • 1 tablespoon curry spice

Instructions

  1. Heat oven to 450F.

  2. Cut the cauliflower into small, equal sized florets and place in a large bowl.

  3. Pour the oil on top, and then sprinkle with the curry spice. Mix until evenly blended.

  4. Place the cauliflower on a parchment lined baking sheet and roast in the oven for 20 minutes and then stir. Return to oven and roast about another 15 minutes, until cooked through and browned.
