You know you're supposed to eat your greens, right? I hear you say yes, but then I also hear you say, but it's so hard to eat enough greens to stay healthy. A salad here and there is good, but your body needs more. I'm going to give you the opportunity to eat more greens, without having to shovel more salad in your face with this recipe for no bake cashew lime energy bites.

Yes, these little sweet treats are full of cashews, lime, coconut, and a healthy serving of greens. Don't worry, I'm not telling you to throw spinach and kale into these energy bites. The good news is that someone has already done that part for you.

Cashew Lime Energy Bites {Gluten Free, Vegan}

Makes 12

Ingredients

  • 1/2 cup dates
  • 1 tablespoon Kyo-Green Greens Blend
  • 1 cup + 2 tablespoons cashews
  • 1/4 cup + 2 tablespoons coconut flakes
  • 2-1/2 tablespoons fresh lime juice
  • 1 tablespoon coconut oil
  • 2 tablespoons coconut flour
  • Salt to taste

Instructions

  1. Place the dates in warm water, enough to cover the top and set aside. Allow to sit for 10 minutes and then remove the dates and take the pits out. Reserve the date water.
  2. Place the dates, greens, 1 cup of the cashews, 1/4 cup of the coconut flakes, lime juice, and coconut oil in a high speed blender and blend until combined.
  3. Add up to one tablespoon of the date water. Blend until you have a smooth consistency.
  4. Add the coconut flour and pulse until thoroughly combined and the mixture begins to have a dough-like pull. You can add more date water or coconut flour to get the right consistency.
  5. Drape parchment across a 6x8" pyrex container. Place the mixture onto the parchment in the container. Take a spatula and spread the mix evenly in the pyrex. Place in the refrigerator and allow to set at least 30 minutes, but you can also make the day before.
  6. Before serving, take the remaining 2 tablespoons of cashews and coconut flakes and toast in a 400 oven for a few minutes until browned. Once cool, chop finely and place on top of the cashew lime energy bites. Chop into squares and enjoy.
