Have you been seeing "fat bomb" recipes pop up all over certain food circles? You might think anything that includes the words fat bomb should absolutely be avoided, but you'd be wrong, mostly.
Fat bombs, like my dairy free lemon blueberry bites, are a high fat, low carb treat. They've gained in popularity with the ketogenic diet crowd, but there are also many health benefits for others as well.
So Fat is Healthy?
You've heard me say before that unsaturated fat is not something to fear. In fact, you should definitely be adding it to your diet. Your body needs healthy unsaturated fat to operate. It can be a great back-up fuel source and fat can also help lower cholesterol, absorb vitamins, and regulate your blood sugar.
My favorite thing about eating healthy fat is that it fills you up. It makes you feel full after eating just a small amount, so not only do you feel satisfied after consuming it, you also stop eating. All of that can lead to fewer calories consumed and possible weight loss. Yes, eating good fat can help you lose weight.
The coconut oil in these fat bombs also has a number of health benefits. Coconut oil is made up of medium chain fatty acids, which are an easy to digest, fuel source for your body. Coconut oil also is anti-inflammatory, antifungal, antibacterial and antiviral. Net-net, coconut oil can do a lot of good for your body.
So I made these dairy free lemon fat bombs as a healthy snack or dessert to fill you up, as well as to fuel you.
Of course, I should say that you shouldn't sit down and eat a dozen of these fat bombs in one sitting. They're a treat and go along with a healthy lifestyle, so eat in moderation, and in association with a clean eating diet.
Make a big batch of these paleo keto bites and keep them on hand in the fridge when you need a little something to tide you over.
I threw some blueberries in for an added burst of flavor, and little pop of color, but you can remove or swap for another favorite berry.
I also like using mini reusable silicone cupcake holders for these. They slip right out and you can rinse and repeat with a new batch.

Dairy Free Lemon Fat Bombs
Paleo, Keto, Vegan, Gluten Free, Sugar Free
Makes About 16
- 3/4 cup coconut butter, melted
- 1/2 cup coconut oil, melted
- 1 tablespoon lemon zest (from organic lemon)
- 3 tablespoons fresh lemon juice
- 15 drops of Stevia or sweetener of your choice
- 16 - 32 blueberries (optional or other berry of your choice)
- Mix all ingredients except the berries in a bowl until combined.
- Place mini silicone holders in a cupcake tin. If using berries, place 1 or more berries at the bottom, then top with about a tablespoon of the lemon mixture.
- Refrigerate for at least 30 minutes to an hour until set. Enjoy and then keep covered in the fridge.
