Don’t waste your food! Here are some healthy and delicious food scraps recipes that use leftover stems, pulp, and veggie extras so nothing goes to waste. All recipes are gluten free, dairy free, sugar free, vegan and paleo.
Have you ever gone to the farmer’s market, or even the grocery store, bought fresh carrots, and the person you’re buying it from asked, “do you want me to chop off the tops and discard them for you?”
I usually let out a resounding “No!” Those leafy carrot tops are great in a pesto as you’ll see below, or you can throw them in a smoothie for added vitamins.
The same goes for beet greens. While I love pickling beets, you don’t use the top beet greens in the recipe, so what to do? You can easily braise the greens for a great two-fer dish from one healthy vegetable.
Another big food waste item is all of the pulp that comes from juicing. I decided to make crackers out of some carrot pulp to avoid any waste, and to have a tasty gluten free cracker!
