The same goes for beet greens.

While I love pickling beets, you don’t use the top beet greens in the recipe, so what to do? You can easily braise the greens for a great two-fer dish from one healthy vegetable.

Another big food waste item is all of the pulp that comes from juicing. I decided to make crackers out of some carrot pulp to avoid any waste, and to have a tasty gluten free cracker!
