Anyone devouring blueberries like me right now? I really can't get enough. In fact, I looked in my fridge on Monday and realized I had two separate pint containers of them. From my surplus comes this recipe for chocolate blueberry nut clusters.

My blueberry surplus wasn't entirely my fault. I went to one of my fruit guys at the farmer's market to buy lemons and he said, you have to try the blueberries this week. They're incredible right now. One bite later, I was taking yet another basket of blueberries home with me.

I don't eat much sugar outside of some fresh fruit, but I do like a little chocolate from time to time. Of course I make sure the chocolate doesn't include refined sugar, and yes, there are a few brands out there who are sugar-free like Lilly's.

Lily's uses stevia in a few of their products and stevia works for me. It's a much better alternative to sugar as it doesn't spike your blood sugar. It comes from a leaf and has no carbohydrates, calories or artificial ingredients, so I'm in. My friends at Diabetes Strong wrote a really helpful post on how natural and artificial sweeteners affect blood sugar if you'd like to learn more.

So these chocolate covered blueberries couldn't be easier. Melt some chocolate, dunk the berries and sprinkle your favorite nuts on top. I like walnuts with this combo, but use your favorite.

You just need to refrigerate them for a little while so they set and then you're getting a big fill of antioxidants from both the blueberries and chocolate. Yes, I'm calling my dessert recipe healthy, so enjoy!

Chocolate Blueberry Nut Clusters {Vegan, Sugar Free}

Makes about 20

  • 1 cup fresh blueberries, preferably organic
  • 1 cup vegan, sugar-free chocolate chips like Lily's
  • 1 tablespoon extra virgin coconut oil

  1. Melt the chocolate chips and coconut oil in a double boiler, stirring constantly until smooth. Remove from heat.
