I could eat avocados everyday, and I pretty much do. Avocados are a good healthy fat and they just taste really dang good.
But there's nothing quite like guacamole. I grew up eating guacamole and could eat it by the spoonful.
So I decided to spruce up my guac recipe by throwing in some black beans for even more protein and substance, and I'm always a fan of upping the spice level, so in went some chipotle peppers.
This spicy black bean guacamole is great on chips or layered onto tacos. I've even been throwing it on a gluten free tortilla and topping with some grilled shrimp for a complete meal.
It's an easy crowd pleaser that's healthy and full of great nutritional benefits.
Spicy Black Bean Guacamole
Makes about 2 cups
- 2 ripe avocados, peeled and cored
- 1-1/2 cups of black beans, rinsed
- 1/2 bunch of cilantro
- Juice of 1 lime
- 1 chipotle pepper - seeds removed for less heat
- 1/2 teaspoon Sriracha
- 1/2 teaspoon Celery Salt
- Place avocados and black beans in a large bowl and mash until large pieces are broken up, but it's ok to keep a few chunks. Add the remaining ingredients, stir and serve!
